I LOVE to cook and thought it would be fun for the TM'S to put our menus for dinner that day on the forum...I don't know about all of you but some nights it's hard to decide what to fix and this could give us several different options! It is always nice to have new ideas and I would LOVE to get our "Not Edward's Kind of Menu" going! *The name choice is due to the fact that I really don't think he would enjoy our culinary (unless they were cooked rare) masterpieces...although they might be so DELISH that even he would indulge!!*

MY FAVORITE SPAGHETTI SAUCE (and NO it's not RAGU):

1 Large Onion (or onion flakes work well also)
1 lb. of hamburger
1 qt. crushed tomatoes
1 can tomato soup
2 small cans tomato sauce
1/4 green pepper, chopped (optional)
2 tsp. chili powder
2 Tbsp. sugar
1/2 tsp. garlic salt
1/2 tsp. oregano
2 tsp. salt
Mushrooms (optional)

Brown hamburger and onion (remove any standing grease); remove from heat and add additional ingredients, and stir. Simmer for at lease one hour prior to eating. ENJOY with a nice salad and some garlic bread, YUMMY!! *Remeber to cook those spaghetti noodles*

This is great! My sis in law and I have been trading recipies because i am SICK TO DEATH of my own....so tonight I am making the Rachel Rays Ginger Chicken Noodle Bowls

2 tblsp veg oil
1 lb bonless skinless chicken, cut in bite size pieces
1 tblsp fresh garlic
1 tblsp fresh ginger
1 bag of broccoli slaw
Salt and Pepper to taste
2 tsp cumin
2 tsp Chinese Five Spice Powder
6 C Chicken Stock
1/2 lb thin spaghetti
4 green onions, chopped
2 cups bean sprouts

Heat oil in a Med Pot, over Med heat. Add the chicken and cook 3 min. Add the garlic, ginger and broccoli slaw. Season with S&P. Add the cumin and 5 Spice. Add the stock and bring to a boil. Add the spaghetti and reduce to a simmer. Cook 3 min. Then finally add the onion and bean sprouts. Turn off heat and let stand for 5 min. Adjust seasonings and serve.

My kids LOVE this! Very Happy

Twice Baked Potatoes:

8 Baking Potatoes
2 Sticks of butter sliced into 1 inch sections
1 cup bacon (crumbled)
1 cup sour cream
1/4 tsp. Lawry's Seasoned Salt
1 cup cheddar/jack cheese
Fresh ground black pepper to taste
2/3 of 1 green onion (optional)

Bake potatoes (DO NOT WRAP IN FOIL) at 400 degrees for 1 hour and 15 minutes (make sure sufficiently cooked). Cut the potatoes lengthwise and scrape the insides clean (leaving a thin layer of potato for support).

Place the empty potato shells on a baking sheet. In a large mixing bowl mash the butter, sour cream, bacon bits, and the potato innards using a potato masher until completely mixed. (leave it a little lumpy) Now add the Lawry's Seasoned salt, fresh ground black pepper (to taste), cheese, and green onion and mix thoroughly.

Fill the empty shells with the potato mixture and top with some more yummy cheese. Cook the shells in a 350 degree oven for 15-20 minutes or until the potato is warmed thoroughly.

These little guys are delicious with a salad and if you are really hungry a nice steak (or whatever you fancy)!

This is the easiest dinner.

1 bottle Russian Salad Dressing
1 jar apricot & pineapple preserves
1 packet lipton onion soup mix

Mix all of the above ingredients in a bowl put chicken in a pan and pour the mix on top and throw in the oven at 350 degrees for 45-60 minutes. Or until chicken is cooked!

I like it served over rice and some brocolli on the side.

Here's a really easy recipe I make pretty often - can be used for a casual dinner or for entertaining.

Bacon-wrapped chicken

Raw chicken breasts
Alouette garlic-herb cheese spread (you can also use other varieties, and I use the reduced fat versions)
Uncooked bacon
Salt and pepper

It's simple - just spread some of the cheese spread over the raw chicken, loop around the bacon a few times, and set in the pan. You don't need to grease the pan, but I usually spray it with Pam. Sprinkle all with salt and pepper. Bake in preheated oven at 375 for 40 minutes or until juices run clear. I broil it for the last two or three minutes to crisp up the bacon.

If you want to make it a little fancier, butterfly the chicken breasts, then pound them out to about one inch even thickness. Stuff them with the cream cheese and layer in fresh herbs or baby spinach. Bake as indicated above.

This works to prep ahead of time and refrigerate it overnight - then just bake it five or ten minutes longer the next day. I like to serve it with wild rice (I'm from MN) and asparagus. Yum! Very Happy

This is one my kids and I love.

I have it posted in the LIGHT foods..lots of stuff there too..

Italian Style Baked Chicken Parts

skinless chicken parts, with or without bone, whatever you prefer.
olive oil
fresh lemon juice,optional
flavored bread crumbs
garlic powder
paprika
grated parmesean cheese
black peper

I don't measure, it really isn't necessary....

in one bowl mix olive oil amd lemon juice
in another bowl mix all dry ingredients

lightly coat chicken in olive oil
coat in dry mix

place in lightly sprayed baking pan

spray pieces of chicken

bake at about 350 degrees until golden, crunchy brown.

you can change dry ingredients if there is something else you prefer.

This is the recipe I use for chicken fried steak. I was making it with the cube steak but it always came out so tough and dry so I played around and tried to replicate the flavors with ground beef and it came out REALLY good. I usually serve it with McCormicks Country Gravy (packets) but you can have it without and it's just as good.

Chicken Fried Steak

1lb ground beef
1tsp dried parsley
1tbsp chili powder
1tsp salt
1 egg
2 cups crushed club crackers
oil for frying

Mix together the ground beef, parsley, chili powder, salt, egg, and 1 cup of crushed club crackers. Form into 6 into patties. Press patties into remaining cracker crumbs to coat, and put them on a plate. Refrigerate for about 30 minutes. (I refrigerate to harden them because if not they are floppy and hard to fry and will fall apart in the pan. If you are pressed for time you can throw them in the freezer for about 7-10 minutes and that works just as well.)
Heat the oil in a pan. Fry patties for about 7 minutes per side, or until the centers are well done and the outside is golden brown.

Tonight's Menu:
This comes via "The Pioneer Woman" and it is SOOO YUMMY!! Your kids will LOVE it!

Pioneer Woman Chicken Casserole

2 cups cooked chicken (I use a Costco rotisserie)
2 cans Cream of Mushroom soup (I use 1 cream of mushroom & chicken)
2 cups grated sharp cheddar cheese
1/4 cup finely diced green pepper
1/2 cup finely diced onion

1-4 oz jar diced pimentos, drained
3 cups dry spaghetti, broken into two inch pieces
2 cups reserved chicken broth from pot
1 teaspoon Lawry’s Seasoned Salt
1/8 to 1/4 teaspoon Cayenne pepper
Salt & Pepper to taste
1 additional cup grated sharp cheddar cheese

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente (not completely cooked because you will bake this later). Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar. Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil.)
