If you want to make it a little fancier, butterfly the chicken breasts, then pound them out to about one inch even thickness. Stuff them with the cream cheese and layer in fresh herbs or baby spinach. Bake as indicated above.

This works to prep ahead of time and refrigerate it overnight - then just bake it five or ten minutes longer the next day. I like to serve it with wild rice (I'm from MN) and asparagus. Yum! Very Happy

I just made an amazingly yummy dinner that I found in my Mayo Clinic cookbook. Fish tacos with fresh salsa and roasted red pepper sauce. Here's the recipe online:

I picked up fresh Tilapia at the store instead of swordfish. It took about 2 minutes longer to cook than recommended for swordfish and it created a lot of drippings. I would recommend instead of having hard shell tacos to make burritos and add some rice inside to soak up the yummy salsa and roasted red pepper sauce. It did take a while to prep but all the fresh ingredients were great on the warm day we had today. My fiancee really loved it so I'll have to try again soon with the burritos and rice additions.

Shocked Here is a good steak recipe Shocked


Description: Marinade for almost any red meat for grilling


Ingredients:
8 T Vegetable Oil
8 t Parsley
1 1/2 t Salt
8-10 t Lemon Juice
1/2 t Pepper
Garlic Powder to taste


Directions:
Mix all ingredients in zipper bag, add meat of your choice. Refrigerate overnight. Grill meat to your liking.

Number Of Servings: Depends on who is eating

Preparation Time:10 minutes
