Chipotle Pepper and Chicken Soup

1 Cup chopped Onion (Large)
4 Cloves Garlic, minced
1 Tablespoon Olive Oil
12 Ounces Boneless Skinless Chicken Breast, cut into bite size peices
1 14 oz can Chicken Broth
2 teaspoons chopped canned Chipotle Peppers in Adobo sauce
2 Cups chopped tomatos or One 14 1/2 oz low sodium diced tomatos, undrained
1/4 Cup snipped Cilantro (or more is you love cilantro as much as me)
Salt

In a pot cook Onion and Garlic in hot Oil over medium-high heat about 4 minutes, or until tender
add Chicken; cook and stir 2 minutes more
Stir in Broth, Chipotle Peppers (be careful with these!! They are VERY spicy) and 1/4 teaspoon salt.
Bring to a boil; Reduce heat. Simmer uncovered for 15 minutes
Remove from heat; Stir in Tomatos and Cilantro

I love making soup and that one sounds really good! I suppose I'd have to find a specialty store for the peppers though. I've never seen those at my local small town Safeway. lol

They are in a really small can, usually in the traditional Mexican food sections.
